As a German, living in Asia (and yes, Australia is considered a part of Asia 😀) getting some german style "Wurst" and "Aufschnitt" can be a challenge, in particular if you don't live in Melbourne or Sydney. Your best bet is to go to one of the polish or italian smallgoods shops (delis) ... and there, you may find some "Zungenwurst" and a few variations of "Leberwurst" and if you are lucky (pre-pandemic), you might also find "Hand Kaese" or "Limburger" too ... Even ALDI in Australia now has some german style food (cheese, saussage, ham) but If you are "out in the sticks" ... you may need to make your own.

The one thing that certainly seems to be made out of "unobtainium" here (Australia wide and Thailand too) is good quality german style rye bread in particular german sourdough rye bread with caraway seeds. Quark is also in short supply (aka non existing) ... The good news is, Cheesecake can be found everywhere ... even in Chiang Mai (Thailand) ... if you are willing to pay for it.

To help some expats to "scratch the itch" and also to share some german food culture with the rest of the world (whoever is looking), I have put together some recepies here ... stuff that I cook on a regular base. I'll add more as I go (it does take a lot of time to put the info together though 😀)




Deutsches Schwarz Brot mit Kuemmel

German Sourdough Rye Bread with Caraway Seeds ... This is the one I had to do without, for nearly 40 years (!) until I started actively pursuing bread making. Youtube has been a great source of knowledge and after some experimentation, I came up with a process that takes (in total) ca 1 hour of my time (plus the actual baking) to make a loaf of bread that is as good as what you can get in good ol' Deutschland (if not better !)

This cheese cake is in fact a "marriage" between a german recipe for the filling and a italian inspiration for the almont base. It has been refined over the years and I am sure there is room for improvement too ... You could add raisins, cherries or mandarines if you like ... up to you, as they say.

How to make Quark ... from scratch.

Easy to make and very versatile. Use if for making cheese cake or have it "as is" on bread (refined with cream or not) ... or mix it with chopped onions and pepper/salt (and cream if you like) and eat with steamed potatos (skin ON) for a very german dinner. One all time favourite is to take "sahne-quark" and stir in a coupple of spoons of (french) jam like cherry, blueberry, strawberry or whatever ... to make "fruechte quark" ... very nice and good for you (me thinks).
